Chilli chicken pasta salad


Most people like a pasta salad and this one is quick and simple and also safe for those who want to follow the diet for endometriosis - but not compromise on taste.  This is a great dish for the summer and can be prepared in advance and stored in the fridge till you are ready to eat.


Gluten free, dairy free


Serves 2

  • 1 cooked chicken breast, cut into cubes - try to get organic if you can (most supermarkets sell  chicken breasts on their own - dice the meat and lightly fry till cooked, then let it cool)
  • 2 spring onions, finely sliced
  • 1 red pepper, finely diced
  • 150g gluten free pasta, cooked per instructions on packet
  • 1/2 teaspoon mild chilli powder
  • 1/2 teaspoon smoked paprika
  • salt and pepper for seasoning
  • 2 tablespoons nut yoghurt or a low fat natural yoghurt
  • 2 tablespoons mayonnaise - you can buy egg free mayonnaise if you wish to leave eggs out of your diet
  • 1 teaspoon olive oil
  • 2 teaspoons fresh lime juice

1,  Mix together the chilli, paprika, natural yoghurt, mayo, olive oil and lime juice

2.  Stir in the chicken, pasta, pepper and spring onions

3.  Season with salt and pepper

4.  Top with some fresh herbs if you have them like parsley or some spring onions

You can obviously add additional  favourite salad ingredients like tomatoes, cucumber, sweetcorn etc - this will give you extra fibre as well as additional nutrients.
