Spaghetti with Peanut Sauce

Spaghetti with peanut sauce for the endometriosis diet


This is an interesting sauce to give you something to wake up your taste buds with a tang of lime juice.  This meal can be eaten warm or cold so is great for the summer.  As with many recipes here, this one is for larger servings and can serve 4/5 people or you can save some for another day and freeze some portions.


Spaghetti with Peanut Sauce 

Meat free, wheat free, dairy free, soy free

Serves 4 - 5


  • 1 packet wheat free spaghetti ( you can also use gluten free noodles )
  • 2 tsp. roasted peanut oil 
  • 1 cup / 120g carrots grated 
  • 1 cup / 100g red bell peppers finely diced 
  • ¼ cup / 30g coriander chopped 
  • ¼ cup / 40g spring onions chopped 


Sauce: 

  • ½ cup / 125 g natural gluten free peanut butter 
  • ¼ cup/ 70ml tamari sauce 
  • 3 tbsp. fresh lime juice 
  • 2 tbsp. sweetener of choice (ie honey)
  • 1-3 cloves garlic minced 

 


 Prepare pasta according to package directions. Drain and rinse with cold running water. Transfer to large bowl, drizzle with roasted peanut oil and toss to coat. 


 Make dressing using either a blender or a food processor. Combine peanut butter, tamari sauce, lime juice, sweetener and minced garlic. Blend until creamy.

 

 Add carrots, peppers, cilantro, scallions and dressing to bowl of spaghetti and toss to coat. Garnish with chopped peanuts and lime wedges.  Serve cold or at room temperature.
